These special Kubota sake are produced by Asahi Brewery in Niigata in collaboration with Snow Peak and brewed to be enjoyed amid nature with the changes brought by the seasons. The duo use mash rice milled to a refined 33%, resulting in clean gentle sake with melon and apple notes and light acidity. The White half is brewed and stored during mid-winter in super low temperatures using sokujo method which produces a clean, floral-fresh sake. It’s the counterpart to The Black half which is brewed with natural yeast starter and using the Yamahai technique, bringing a distinctively deep flavour. In theory, blending both together would create Kubota’s iconic ultra-premium Manju.
